LISA’S EASY-PEASY CHICKEN

Lisa once made this for me. I made her SWEAR that she would give me the recipe for this blog. I even begged a little. It is very simple and basic—not unlike most things in life that are the most worthwhile. I think you’ll agree.

Ingredients:

4 boneless, skin-on organic and free range chicken thighs

One sweet onion, diced

One cup shiitake/maitake mushrooms, diced

1/4 cup of Pure Indian Foods’ Grassfed Organic Cultured ghee

1-2 cloves of garlic, minced

Celtic sea salt

Other seasonings you love

Instructions:

Wash, pat dry and season the chicken

Melt ghee in a large pan

Sauté mushrooms, onions and garlic

Place chicken in the pan (after adding a little more ghee) and cover with the mushrooms and onions

Cover the pan and cook on low-med heat for about 30-45 minutes

Serve with lots of steamed veggies or a salad
