Both my parents came from Lithuania and among the many Lithuanian culinary delights I grew up with is something similar to this particular dish. I hope my mother will forgive me for the liberties I’ve taken, but I think the rest of you will agree this dish is as delicious as it is healthy!
Ingredients:
- ½ head red cabbage, sliced fairly thin and diced
- KerryGold (or some other quality grass-fed) butter
- Aged balsamic vinegar
- Sautéed shitake/maitake mushrooms (in butter)
Directions:
Melt butter in a large pan. Over medium heat, add red cabbage and a few healthy dashes of balsamic vinegar. Let cook for a few minutes (maybe 5-10) until chewy but still ever-so slightly crisp/crunchy. Add in sautéed mushrooms, warm and serve. Good for 4 or so side servings. Absolutely delicious!

Interesting receipe for red cabbage. We have a Lithuanian Fall Festival and I was looking for red cabbage dishes to make and bring to the FF. My mother came from Lithuania in 1939 and my dad’s parents also are from Lithuania. I went to a Lithuania boarding high school in Holland, PA, but now live in St. Louis, MO. Thank you for this red cabbage recipe. This is my first week ‘going Primal.’ Have avoided processed sugar and processed meals and excessive salt for about a year now. Blood pressure and cholesterol have both normalized for 1st time in 15 years. Whoppee! I wasn’t aware of the need to avoid grains (sugar makers) and starches though ’til I started reading last week about Primal diets. So I’m now looking for recipes to match vegetables and meats readily available in our community. I’ll be making this one tonight, since I now have red cabbage on hand. Thank you.
